If you think olive oil is better than vegetable oils, you’re still under western influence, says Dr. Shashank Joshi, former president of API and a renowned academician. The ideal cooking oil has a balance of saturated fat, monounsaturated fatty acids (MUFA) and polyunsaturated fatty acids (PUFA), which cannot be found in a single vegetable oil. There is scientific evidence from the National Institute of Nutrition and ICMR to show that a blend of oils is ideal for use, because blending two oils gives you the properties of both with a synergy.
